Chinese Eating Customs -- How to Not Offend a Chinese Host

Growing up in a Chinese household, I’ve observed that Chinese eating customs differ quite a bit versus Western eating habits. Those who are not aware may risk offending a Chinese host (or likewise feel offended themselves). Whether eating at a Chinese restaurant or visiting the home of a Chinese host, here are some culinary customs to keep in mind.

Family-Style Eating
Unlike in the West where people order individual dishes at restaurants, the Chinese approach to eating involves sharing multiple dishes laced on a table. I had assumed everyone knew this, but found out this was not the case. While in college some acquaintances and I went out for a Chinese dinner. I ordered a plate of all beef fillets braised in a Chinese-style barbeque sauce to compliment the dishes the others had ordered. I had assumed we were eating family-style. However, when the food arrived, everyone just ate off their own plates they had ordered. Had I known, I would not have ordered myself a giant dish of beef.

The Humble Hostess
When eating in someone’s home, the Chinese hostess (often someone’s mom) will notoriously be humble about her cooking skills. The hostess may be the best chef in the world, but when guests sit down for a meal, she may comment about how her food doesn’t have enough taste, the food is not warm enough, etc. Do not give in to this self-criticism! She is merely acting humble, and if anyone agrees with her, she will likely feel deeply offended.

Know Thy Chopsticks
Think chopsticks are just eating utensils? Think again, they are loaded with meaning depending on how they are used. As a sign of politeness, Chinese hosts may serve food to others using their chopsticks -- note they are using the backend of the chopsticks. Never use the front end as this would be equivalent to the Western concept of “double-dipping.”

It may look fun to stick chopsticks vertically into a rice bowl, but this can be interpreted as sending a death wish to the host. Vertical chopsticks resemble incense sticks in a bowl of sand or rice used when honoring those who have died. No one wants a death shrine at the dinner table.

Tapping chopsticks on a rice bowl may seem like innocent drumming, but this is an insult to the cook. It is seen as impolite as tapping is similar to what beggars do on their bowls. Also, in restaurants, people tap their bowls when the chef is too slow cooking the food.

Teapot Etiquette
Pointing the mouth of a teapot directly at someone is as in impolite gesture, similar to pointing a finger. When drinking tea, always offer to serve others first before pouring into one’s own cup. At a restaurant, when the teapot is empty, simply place the lid partially ajar to indicate it needs a refill (some people turn the lid upside down on the pot). Do not completely remove the lid and place it on the table as this is seen as letting good luck escape.

Slurping and Burping
Loud slurping and bellowing burping at meal time may offend many in the West, but to the Chinese these are compliments to the chef. It is a sign of contentment from a delicious meal. It’s also a good excuse for kids to make loud noises at the table!

Fighting Over the Bill
At Chinese restaurants, it’s pretty commonplace to hear people fighting over a bill. But are they really fighting? No, they are going through a friendly ritual of determining who has the privilege of paying the bill. Even if one party knows he is not likely to pay, he has to at least put up a good fight. He must go back and forth insisting on paying until several rounds have passed. After “losing,” he should then shower the winner with gratitude. Some people “win” by using sneaky tactics like pretending to go to the bathroom with the intention of slipping a credit card to the waitress. When this happens, the other parties should praise the winner for his ingeniousness.

These are just some of the many Chinese eating customs I’ve observed. Which ones have you noticed that are not on this list?

Tips for Handing Down Older Generation Tech Devices to Kids

The new iPad is out, and what do parents do with their old devices? According to a recent PBS KIDS survey, nearly 25% of parents of 2–10 year olds find a second life for their personal tech devices by handing them down to their kids. While it makes sense to do this, parents need to prep their devices to keep kids safe when using these older tablets. 

PBS KIDS recommends these tips:

  1. Sweep it: All devices should be cleaned of any content including personal files, credit card information, etc. before handing down to kids. Parents should swipe all their browser “cookies” and perform an application sweep.

  2. Secure it: There are parental controls on most tech devices that can turn certain features on and off. Settings on the iPhone, for example, that can be restricted include explicit song titles, internet browser, YouTube, iTunes and the camera.

  3. Set limits: As with any new toy, parents should set expectations and limitations with their kids when the device is handed down and should encourage other forms of learning and play beyond the screen.

  4. Find the right apps for your child: A good app is the perfect combination of education and entertainment, and should be appropriate for your child’s age and stage of development.

  5. Avoid apps that try to sell: Apps labeled “lite” or “free” often attempt to make money by trying to sell virtual items while a child is playing a game or link to another related app that requires payment to download. Select apps from trusted, reliable sources, and make sure that they are not trying to market to your child.

Disney Junior Premieres “Doc McStuffins” 3/23, Features Ty Burrell from “Modern Family”

“Doc McStuffins” is a new animated series by Disney Junior for kids age 2-7. It premieres this Friday, March 23, on the popular Disney Junior block on the Disney Channel (10 am-11 am ET/PT) and the new 24-hour Disney Junior channel (4 pm-5 pm ET/PT).

“Doc McStuffins” is about a six-year-old girl named Doc who can communicate and heal toys that need help. Working out of her backyard playhouse clinic, Doc and her pals share tips on self-care and the importance of helping others. Doc’s friends who assist in the clinic include: Stuffy, an overly proud dragon; Lambie, her cuddly best friend; Hallie, a jolly and caring hippo nurse; Squeakers, an alarmist squeaky toy fish; and Chilly, a snowman who spends a lot of time getting check-ups at the clinic.

Emmy Award-winning Ty Burrell who plays dad Phil Dunphy on the hit ABC comedy "Modern Family" guest stars in the new series. In the first story of the premiere episode titled "Out of the Box," Burrell voices Big Jack, a nurturing Jack-in-the-Box, who takes his son Little Jack for a check-up from Doc. In the second story called "Rundown Race Car," Doc helps her little brother Donny's toy race car recharge. Each episode features two 11-minute stories and an original song.

I previewed “Doc McStuffins” with my 3 year old daughter. She was mesmerized and watched the entire show which says a lot as kids this age will walk away if they’re not interested. I thought the episode was cute, informative, and engaging. I also liked the fact that Doc is a person of color in a positive role as there are few characters like her in the cartoon world.

The show was created and executive-produced by Emmy Award-winner Chris Nee (writer on "Little Bill" and producer of "Deadliest Catch: Crab Fishing in Alaska") and directed by Emmy-winner Norton Virgien ("Rugrats"). The series displays a TV-Y parental guideline.

In tandem with the March 23 premiere, DisneyJunior.com will debut a "Doc McStuffins" supersite. The interactive site will feature a clinic where kids can assist Doc in nurturing toys back to health, play with three new online games, and create "Doc McStuffins"-themed crafts.

Chinese Sisters Separated as Toddlers Reunite Decades Later

I’ve known my sister’s mother-in-law, Ann Kuo, since I was a teen. However, I never knew about her long lost sister until Marcella Lee, a family friend and my sister’s sister-in-law, reported on this fascinating story.

Ann and her family had escaped to America and lived a comfortable life. But sister Man-Ching was left behind due to unforeseen circumstances during the turmoil nearly forty years before when the Communist Party took control in China. Man-Ching lived a life of hardship in a small rural village without an education.

Recently, the Kuo clan, including Marcella’s family, visited Shanghai. While there, they visited the Kuo ancestral home. Though Ann and Man-ching’s lives took divergent paths, they have reconnected and formed a sisterly bond.

This lovely flavor, with hints of floral notes, provided a nice subtle lemon zing to the palate. Most teas I’ve tried just contained chamomile, so I liked that this one also included a citrus blend. It’s perfect for relaxing right before bed as it contains no caffeine.

Though the name of this tea makes it sound like it has an extremely strong flavor, it actually is more subtle than the name suggests. I was expecting a bold powerful green tea taste along the lines of the loose kinds served at traditional Japanese restaurants and tea houses, but it was more on par with non-Japanese green teas. It was still flavorful and smoother tasting than non-organic green teas I’ve tried, and the green tea fragrance was nice. This flavor contains a medium level of caffeine.

Distinct orange peel and spice flavors are tempered by smooth white tea in this version. I liked that the citrus flavor and fragrance was noticable, but not overpowering. Compared to non-organic versions of the same flavor, I did enjoy Numi’s better because of its stronger notes. With its lower caffeine level, it makes a nice tea to enjoy for any time of the day.

In addition to creating unique teas, the brother and sister team prides themselves in their company’s philanthropic work. They donate to organizations that support the environment, K-12 and college education, and health-related charities. The company also supports its community through volunteerism by giving its employees four paid hours each month to volunteer for a non-profit.

It’s great to see a family come together to fulfill a dream, and I hope people will support small businesses like this one from Ahmed and Reem.

My Great-Grandfather in History Channel’s West Point Episode 3/17/12

Last year I wrote about how my great-grandfather, Ying-Hsing Wen, was the first Chinese cadet to graduate from West Point back in 1909. Every year my family presents awards in his honor at the West Point’s Department of Foreign Languages year-end celebration ceremony.

Recently, producers at the History Channel contacted me regarding my great-grandfather. They were working on a documentary about West Point, and while doing research they discovered the two articles I had written about my great-grandfather on BiculturalMama.com.

Because of my great-grandfather's status as the first graduating Chinese student at West Point, they wanted to include him in their documentary and asked for any information I may have. Over the years my family had researched my great-grandfather’s life, so I had plenty of documents to share.

Top Tips:

1.      Feel foolish shopping with a calculator? Don’t. Comparing prices is a surefire way to pare down your bill. Calculate how much you’re spending on a single unit of an item and figure out which will give you the best bang for your buck.

2.      Avoid impulse buying. Since there’s no check-out line on Peapod.com, there’s no temptation to buy that candy bar or celebrity magazine.

3.      Stockpile staples. Sometimes you have to spend money to save money, so if anything freezable, such as soup, pasta sauce or meat is on sale, buy two or three of the items and store the extras.

6.      To minimize nutrition and flavor loss, it's best to microwave broccoli. Arrange 1 pound of cut broccoli on a microwave-safe plate and add 1/4 cup of water. Cover with a paper towel, and cook 5-6 minutes on high, rotating once.

Inappropriate Conduct with Students

Let's keep the line clear between
authority figures and students.

In the last month the media has revealed several instances of teachers engaged in inappropriate conduct with students. Just to name a few, there was the story of the California teacher who left his family to move in with one of his students, as well as the female substitute teacher in Long Island who had sexual relations with a 15-year old student.

All of these bring back memories of things I’ve observed or experienced when I was a student that in hindsight were inappropriate.

Just Ask a Question
In middle school there was a science teacher who always put his arms around the girls in class when they came up to his desk to ask a question. He never did this with the boys. Sure, he may have been just extra friendly, but it was enough that the girls in class whispered about how his touchiness was “weird.” It kind of made the girls not want to ask questions unless absolutely necessary. Today, I doubt schools would allow teachers to be this affectionate with students.

The Science Experiment
In my high school science class we were learning about muscles. The teacher asked us to pair up for an experiment where one person would try to isolate and move one muscle while the partner touched that muscle to feel it move. I think the point was to show how challenging it was to control only one muscle at a time since they were all connected.

I ended up without a partner so my science teacher offered to be mine. We sat on chairs across from one another. The teacher touched my thigh and asked me to isolate and move that muscle. Things to note: 1) the teacher was male, 2) I was wearing a skirt that rode up when I sat down so he was touching my bare leg, 3) he could have chosen anywhere to perform the “experiment” including less controversial areas like hands, arms, or face. At the time I thought where he chose to touch me was a bit odd, but he was a teacher – an authority figure – and this was in the name of science so I didn’t say anything. Though the experiment was brief, in hindsight I know the teacher should have made a better choice.

The Internship Interview
During my junior year of college I was looking for an internship. After an initial successful first interview at my college with a well-known greeting cards manufacturer, the company flew me to its headquarters for a second interview. One of my meetings was with a man in his 30s or 40s who sat behind his desk as I sat across from him.

Throughout the interview, the man asked me questions while sitting tilted back in his chair. He had both hands behind his head and crossed his feet ON the desk so that I got a good view of the soles of his shoes. He started tapping his foot in the air, and his shoe was partially off so that is was going flip-flop, flip-flop as his foot moved. He did this so much that eventually his shoe fell off.

The last question he asked was: “Why should I hire you when you’re probably just going to get married out of school and have babies right away?” I was shocked; I didn’t know what to say. I ended up mumbling something about how I was too young to get married and how I wanted a career.

Today with my confidence and experience I would have said, “This is an inappropriate and illegal question” and reported him to his manager as well as to my school. But back then I didn’t know that those types of questions were illegal, I was caught off guard, and I needed an internship. The company did not end up offering me a position, but in retrospect this was a blessing.

Awareness is Key
It’s sad that the instances above and worse are probably commonplace. I think today people are more cognizant about what’s appropriate or not due to more media exposure, but as parents we need to continue the discussion with our kids…including understanding that authority figures can abuse their power, too. It is through awareness that we’ll be able to arm them from harm.

Yesterday I received an email from my 12 year old niece. Here are portions of her email (reprinted with her permission):

Dear Auntie Maria,

How are you? I'm [emailing you] about this video I saw from friends. It's called Kony 2012. 

Kony 2012 is a video. This video is to promote a guy named Joseph Kony. Joseph Kony is not famous, is not good, is not helpful to the world. He is in Africa. He abducts children, makes the girls into sex slaves, and the guys into a child army. He makes them distort people's faces in not a nice way and also forces them to kill their own parents. He does this for no cause. He was only motivated to do this because he wanted to show his power. He has an army of over 30,000 kids.

I want to tell my niece that she is NOT wasting my time. She should know that I am very proud of her for taking the initiative to get involved. Change doesn’t happen by itself. A lot of people complain about things, but don’t actually do anything about it. It’s a great lesson for kids to know that their actions can make a difference.

Meet Sprout TV Characters at the Philadelphia International Flower Show

The Philadelphia International Flower Show is in full swing featuring the theme “Hawaii: Islands of Aloha.” The family-friendly event includes beautiful exhibits of colorful and fragrant flowers as well as a family lounge sponsored by Sprout (opened 10 am to 5 pm, parents must accompany children). Sprout’s Super WHY and Wonder Red will make an appearance each day.

Preschoolers can participate in an extra special event, “Sprout Snack,” featuring the Sprout TV channel for kids. The event takes place on Sunday, March 11, from 3:45 to 5:15 pm. Join Sprout's Kelly from The Sunny Side Up Show, The Pajanimals and the Berenstain Bears for a snack an interactive activities for the whole family. Sprout characters will visit each table of kids for autographs, family pictures. Kids will also receive goodie bags.
