Happy Chinese Moon Festival! Savoring Mom’s Moon Cakes

Today is the Chinese Mid-Autumn Festival, also known as the Moon Festival. The Chinese holiday is always celebrated on the day the moon is the fullest, traditionally the fifteenth day of the eighth month of the lunar calendar.

The festival originated over 3,000 years ago when Chinese emperors worshipped the moon in the autumn in hopes of bringing in a bountiful harvest. Today, Chinese people all over the world observe this holiday.

To celebrate, families come together and share good company and even better food. Moon cakes represent the symbolic food for this holiday. Here’s the background on how the moon cakes came to be:

“During the Yuan dynasty (A.D.1280-1368) China was ruled by the Mongolian people. Leaders from the preceding Sung dynasty (A.D.960-1280) were unhappy at submitting to foreign rule, and set how to coordinate the rebellion without it being discovered. The leaders of the rebellion, knowing that the Moon Festival was drawing near, ordered the making of special cakes. Backed into each moon cake was a message with the outline of the attack. On the night of the Moon Festival, the rebels successfully attacked and overthrew the government. What followed was the establishment of the Ming dynasty (A.D. 1368-1644). Today, moon cakes are eaten to commemorate this legend.”

I remember my mother spending all day in the kitchen to prepare a ten course family-style meal for dinner. In addition to making a feast, she would make moon cakes by forming dough, filling it with a sweet sesame and lotus seed paste, and then placing it in a heavy metal mold in the shape of the moon (in other versions, duck egg yolk is added to the filling as it's round shape is like the moon). My mother would then pound the mold to pop out the cake, and she would glaze the top with an egg wash so when they baked they’ll come out nice and shiny. The delicious smell filled the house with a mouthwatering aroma and eating my mother’s moon cake’s fresh from the oven is one of my favorite memories.

The pattern in my mom’s mold included an imprint of a rabbit on the moon also known as the Jade Rabbit. Here’s what the hare represents:

“In this legend, three fairy sages transformed themselves into pitiful old men and begged for something to eat from a fox, a monkey and a rabbit. The fox and the monkey both had food to give to the old men, but the rabbit, empty-handed, offered his own flesh instead, jumping into a blazing fire to cook himself. The sages were so touched by the rabbit's sacrifice that they let him live in the Moon Palace where he became the ‘Jade Rabbit.’”

My mother, who lives out of state, told me today that she saved moon cakes in the freezer for me and my family so that we could enjoy them when we next visited. That’s my mother, always so thoughtful. She’s saved moon cakes for us in the past and my husband and daughter were able to taste her creations. I’m so glad they were able to experience my family’s traditions. Happy Moon Festival to everyone!

How to Help Half a Million Teens from Abusing Medicine

Pin It One of the biggest milestones during the teen years is getting a drivers license. While parents may dread the day their teen gets on the road, they should also be aware of another milestone, a tragic one, which is impacting families across the nation. More Americans die from drug overdoses than in car crashes, driven by prescription painkiller overdoses.
  • 1 in 6 teens admits to abusing prescription drugs.
  • One person dies every 19 minutes from a drug overdose in the United States, and this increasing trend is driven by prescription painkillers.
  • Two-thirds (65 percent) of teens who abuse prescription painkillers say they get them from family members and friends.
The Partnership at Drugfree.org with a coalition of partners is pursuing a goal of preventing half a million teens from abusing medicine within five years. Launched during the week of September 23rd, The Medicine Abuse Project will bring together families, communities, health care and industry professionals, educators, and law enforcement and government officials to stop teen medicine abuse.

You can help by taking two simple steps:
  • Take the Pledge to learn more and stop teen medicine abuse.
  • Take control of your medicine: store medicine securely and participate in a Take-Back Day on Saturday, September 29th.
Find additional information as well as a full list of the launch week events at medicineabuseproject.org.

Sofia the First: Once Upon a Princess
Disney will introduce its first little girl princess with the debut of "Sofia the First: Once Upon A Princess," an enchanting, music-filled animated Disney Junior television movie for the whole family, SUNDAY, NOVEMBER 18 (7:00-8:00 p.m., ET/PT) on Disney Channel and THURSDAY, NOVEMBER 22 (9:00-10:00 a.m., ET/PT) on Disney Junior, the 24-hour channel. Created for kids age 2-7 and their families, the stories of "Sofia the First" communicate positive messages and life lessons that are applicable to young children.  While she lives in a captivating world of castles, wizards and flying horses, Sofia remains a relatable peer-to-peer princess who is experiencing many of the same social situations as young viewers at home including learning how to fit in, making new friends and mastering new skills.

Disney's Cinderella will even make an appearance in the movie to offer Sofia some words of wisdom – princess to princess.

Rabbit Days and Dumplings Asian Folk and Children's Album Debuts Today

I’m always looking for new ways to keep my daughter’s Asian heritage alive in our bicultural family. One way we keep our heritage present is to listen to CDs related to Asian culture while driving in the car. That’s why I was thrilled to have the opportunity to review Rabbit Days and Dumplings, a collection of reinterpreted and rearranged folk and children’s song from China, Japan, Korea, Taiwan and Tibet.

The debut album from New York based Elena Moon Park and Festival Five Records (home of Grammy award winner Dan Zanes and Friends) launched today, September 25, 2012. The compilation features songs that use traditional Asian and western instruments to create a modern and unique sound.

The tunes included children’s songs (such as the Korean San Toki), traditional folk songs specific to a region (Soran Bushi, a popular sea shanty from Northern Japan), traditional songs like the story of the rainy season and an eel (Taiwanese song Ti Oh Oh) and more.

Some songs are sung entirely in native languages while others blended in English. Elena revealed, “I believe that music, like food, has a unique ability to reach across borders, cultures, languages, ages, and backgrounds in a profound way.”

Her statement rung true -- I found myself humming to the melodies even though I may not have understood the words. That’s the universal sign of good music. Some of my favorites included the catchy Sol Nal and Diu Diu Deng. Overall I enjoyed the songs on Rabbit Days and Dumplings and valued the album’s appreciation of Asian culture.

Tips for Packing a Lunchbox and Lunch Line Feature

School has started, and I’m packing lunches for my preschooler for the first time. I’m always looking for ways to make these lunches healthier so I was thrilled to find these tips from Whole Foods:

1.       Substitute avocado or hummus for mayo – avocado serves as a healthy fat source plus provides a creamy spread for sandwiches.
2.       Pep up your plain old Peanut Butter and Jelly with almond butter and fresh fruit slices – fresh fruit means natural sugars.
3.       Always use whole grain breads or tortillas – wraps are a fun change of pace especially when they are packed with veggies.
4.       Savor seasonal flavors – pack a piece of fruit or cut vegetables for a crunchy snack.
5.       Swap processed chips and snacks for healthier homemade options – trail mix with dried fruits and nuts or whole grain chips and hummus make the grade.

Since we’re on the subject of lunch, I also wanted to mention that this month the Do Something Reel Film Festival is featuring Lunch Line, a documentary about the national school lunch program. The film follows six school age children from one of the toughest neighborhoods in Chicago as they set out to make school lunches better. Their efforts are recognized and they end up at the White House.

Lunch Line is available on iTunes and other platforms for $3.99 — you can visit dosomethingreel.com for more information about the film and the digital festival.

Reached My 300th Post! Highlights Since #200

Disney Baby Launches Minnie Mouse Collection by Graco
Parents look to other parents to find out about the latest baby and kids products. I work a lot with Disney as the company is always coming out with new and cool items. As a side note, I had interned at Walt Disney World in Orlando as a MBA marketing student back in 1999. Little did I know then that over a decade later I’d be working with them again, but in a much different capacity (Babies! Kids!).

My first taste of Soy Sauce Ice Cream!

Soy Sauce Ice Cream Recipe
Yes, you can make ice cream with soy sauce, and it’s not gross like many assume it to be. This is a unique way to fuse Asian flavor into an American favorite treat. It only requires 4 ingredients and you don’t even need an ice cream maker to create this yummy dessert. It tastes sort of like salted caramel (an interesting mix of savory and sweet).

Groupon Boycotted Over Torture Porn Company Tours
When I heard about this, I just had to write about it because it’s so bizarre and well, wrong in my opinion. A national boycott took place against Groupon for promoting discounts on tours of the torture porn studio in California. Groupon defended its position for a while until the movement grew large enough to affect its business. Eventually Groupon removed the porn tour tickets due to public pressure.

Surprising Survey Results on Learning Disabilities Awareness

The National Center for Learning Disabilities (NCLD) recently released a revealing new survey showing that Americans lack a basic understanding of learning disabilities (LDs)

The survey of nearly 2,000 American adults finds that Americans are confused about the causes, treatments, and rights of those with LDs. Myths persist regarding the correlation between IQ, poor vision and childhood vaccines to LDs.

A few highlights from the survey include:

  • Over 66% of parents want more information about learning disabilities than schools currently provide.
  • 33% of respondents said it is appropriate to ask a job candidate if they have a learning disability, when it is in fact against the law.
  • 43% of those polled said that there is a negative relationship with IQ and the presence of learning disabilities, where no such correlation exists.
  • 22% incorrectly believe learning disabilities can be caused by too much screen time; 31% believe a cause is poor diet; 24% believe a cause is childhood vaccinations.

Reflecting on the 11th Anniversary of 9/11

After 9/11, my coworkers and I
lined the West Side Highway to
cheer emergency workers heading
to Ground Zero.
Photo: Maria Adcock

A few days ago my husband and I watched a 9/11 documentary on the National Geographic channel. Watching those documentaries every year never fails to get us teary eyed, especially because we were both in New York City on that tragic day in 2001.

Though a new memorial stands in the footsteps of the Twin Towers and construction on a new building will be completed in about 2 years, the scars remain for those I know who lost loved ones in the World Trade Center eleven years ago.

My toddler is growing up in a much different world than the one I grew up in. When I was little, terrorism happened in far away places that the news would mention almost in passing. In a few years, my daughter will hear about 9/11 whether from her classmates or on TV. I will have to explain to her what happened on 9/11, and I’m not sure how yet.

In the past few years I have written about my personal experience with 9/11 having lived just a mile away from Ground Zero at the time. One day when she’s old enough my daughter can read these essays and view the photos I took from my apartment window which had a clear view of the billowing smoke from the destruction.

Most of all, I will tell her about the heroes that day (like her NYC firefighter uncle) who worked endless hours on 9/11/01 and thereafter to help others at Ground Zero.

Learn Kitchen Secrets in The Asian Grandmothers Cookbook

Watching Asian grandmothers cook is a lesson in learning how the pros do it best. They don’t require recipes or measuring spoons – only the knowledge tucked in their heads from years of experience. Dishes are complete when they look good, smell good and taste good.

The Asian Grandmothers Cookbook: Home Cooking from Asian American Kitchens (Sasquatch Books; October 2009) is the ultimate cookbook for those who wish to cook authentic Asian food. Author Patricia Tanumihardja compiled 130 recipes in this cookbook influenced by her own experiences growing up in Singapore to parents hailing from Indonesia. She wanted to record traditional recipes that had only been passed down through word of mouth or by example through grandmothers.

She revealed, “Food shapes us as a society and in my case, food together with the values my parents instilled in me shaped who I am. Indirectly through food I learned customs and traditions. All grandmothers are the keepers of culture and the culinary flame for their children and especially their grandchildren.”

Patricia interviewed, cooked with and connected with grandmothers, mothers, and aunties from China, Japan, Indonesia, Vietnam, Singapore, Korea, India, Thailand and more to compile the recipes. There are no modified versions with shortcuts; so while some recipes are quick and easy, others require more involvement and ingredients. The reward is not only in the completed dish, but also in the cooking journey itself.

Unique aspects of the cookbook include profiles highlighting some of the Asian grandmothers who contributed their recipes. These stories provide depth to the reader to understand the tradition and culture behind these culinary delights. Full color, high-quality photos allow readers to “taste” the dishes with their eyes. The cookbook also contains a glossary that explains the ingredients found in the Asian pantry. Other helpful sections of the cookbook include tips for menu planning and an explanation of Asian cooking techniques and equipment.

Recipe flavors meld together soy, ginger, hot chilies, tart vinegars and more. The cookbook includes favorites such as Chinese Garlic Fried Rice, Filipino Chicken Adobo, Japanese comfort dish Oyako Donburi, Burmese Pork Curry and all others Asian children remember growing up with.

The Asian Grandmothers Cookbook: Home Cooking from Asian American Kitchens should be a culinary staple in any kitchen that embraces traditional Asian cooking. It’s also a great gift idea for the culinary fan at home.

Soy Sauce Ice Cream Recipe

Tasting for the first time soy sauce ice cream with
Angela Chee (@TheZenMom), Jim Lin (@BusyDadBlog)
and Grace Hwang Lynch (@HapaMamaGrace)

Photo: Maria Adcock
While at the BlogHer 2012 conference a few weeks ago, I was drawn to an offering of free soy sauce ice cream at the Kikkoman booth. It sounded intriguing, in a “Will it really be good?” way. Surprisingly, it was tasty with a flavor similar to salted caramel though not as sweet.

For those who want to try it at home, it’s super easy to make with only four ingredients and no special ice cream maker machines required. Here’s the recipe…enjoy!

SOY SAUCE ICE CREAM
  • 3 eggs, separated
  • tablespoons brown sugar, divided
  • 3/4 cup heavy cream
  • 1/2 teaspoon Kikkoman Soy Sauce
Set out 3 bowls. In the first bowl, place 3 egg whites and 2 tablespoons brown sugar. Whip egg whites with brown sugar until it peaks. In the second bowl, pour in heavy cream and 2 tablespoons brown sugar. Whip heavy cream and brown sugar until it peaks. In the third bowl, add 3 egg yolks, 1 tablespoon brown sugar, soy sauce and then stir to combine. Combine whipped egg whites to the whipped heavy cream, and then mix thoroughly with the egg yolk mixture. Freeze until firm in a freezer safe container.
