I love my mom’s Chinese cooking. She’s such an expert that she never needs recipes; she goes merely by taste, smell, touch and sight. My Chinese food cooking skills are adequate but nothing compare to my mom’s. I still need to use a cookbook to ensure the dish turns out well. Fortunately I came upon a new resource with the release of Katie Chin’s Everyday Chinese Cookbook: 101 Delicious Recipes from My Mother’s Kitchen [Tuttle Publishing].

Author Katie Chin is the daughter of award-winning chef Leeann Chin who owned dozens of Chinese restaurants found primarily in Minnesota. Early in my career I lived in Minnesota for my marketing job at General Mills. At that time General Mills had bought the name to Leeann Chin’s restaurants, and this is how I first learned of the restaurant chain. The food was delicious, comforting, and the go-to place for Chinese cuisine in Minneapolis. Since then investors have acquired Leeann Chin, Inc., and daughter Katie Chin has come into her own as a Chinese food expert and author.

Each dish is introduced with an anecdote that recalls a certain time and place in Katie’s memories. Says Katie, “To me, cooking is storytelling and I am so honored to share my mother’s life story through her recipes and illustrate how every dish she made was an expression of love for her children and a gateway to a better life for our family. “

The book includes helpful information for the home cook such as primers on “Understanding Chinese Ingredients,” “Basic Cooking Techniques and Tips,” and “Basic Tools and Utensils.” The cookbook is organized into these sections: “Sauces,” “Starters and Dim Sum,” “Salads,” “Soups,” “Poultry,” “Beef, Pork and Lamb,” “Seafood,” “Vegetables and Tofu,” “Noodles and Rice,” and “Drinks and Desserts.” Chinese cuisine fans will find classics like Kung Pao Chicken and Shu Mai, restaurant favorites like General Tso’s Chicken and Orange Chicken as well as Chin’s signature Firecracker Shrimp.

Gorgeous photographs by Masano Kawana accompany each recipe, and recipes using less familiar techniques guide readers through step-by-step photo instructions.
