Kid Friendly Tofu Recipes for Back to School

Some kids, when they hear the word “healthy,” automatically assume a food will taste bad and will then refuse to try it. Take tofu – it’s a healthy source of complete protein that is low in fat, cholesterol-free, and includes bone-healthy minerals like calcium, potassium, and magnesium. But when kids see that white rectangular block of tofu, their mouths will often clamp shut. What’s a parent to do?

Hide it. Yes, hide tofu in their meals.

Parents can substitute tofu into many recipes their kids love such as macaroni and cheese, lasagna, fruit smoothies, and desserts. The tofu’s taste and texture is hidden within the flavors of its surrounding ingredients so kids will likely have no idea their meals contain this healthy protein.

Chocolate Breakfast Shake

Number of Servings: 1 shake

INGREDIENTS:

  • 1/3 10 oz. block Nasoya firm tofu
  • 1 small banana, sliced
  • 5 tbsp. unsweetened cocoa powder
  • 1/4 cup skim milk (almond, soy, or coconut milk)
  • 1/2 tsp. vanilla
  • 5 tbsp. brown sugar
  • 1/2 cup ice

PREPARATION METHOD:
Add everything to a blender and blend until smooth.

 

TofuOatmealPancakes tofu recipes

Protein Packed Tofu Oatmeal Pancakes

Number of Servings: About 24 pancakes

INGREDIENTS:

  • 1/2 package (8 ounces) Nasoya Silken Tofu
  • 1 1/2 cups milk
  • 2 tablespoons vegetable oil
  • 1 teaspoon vanilla
  • 1 egg
  • 1 cup quick-cooking oats
  • 1 cup whole wheat flour
  • 3 teaspoons baking powder
  • 1/2 teaspoon salt

PREPARATION METHOD:
In medium bowl, whisk together tofu, milk, oil, vanilla and egg. Stir in oats, flour, baking powder and salt just until blended.

Grease or oil griddle or 10-inch skillet with vegetable oil or shortening. Heat griddle to 375°F or heat skillet over medium heat. For each pancake, pour slightly less than 1/4 cup batter onto hot griddle.

Cook pancakes until puffed and dry around edges. Turn; cook other sides until golden brown. Top with syrup or berries.

 

SmokyChipotleMac&Cheese tofu recipes

Smoky Chipotle Mac & Cheese

Number of Servings: 8

INGREDIENTS:

  • 1 lb. box Cellentani (or any hearty pasta)
  • ½ cup butter
  • ½ cup flour
  • 2 chipotles in adobo minced
  • 4 cups shredded 3 cheddar blend
  • 4 cups whole milk
  • 2 packages of Nasoya TofuBaked
  • 1 small can diced green chilies drained
  • 1/2 can fire roasted diced tomatoes drained
  • 1 tsp salt
  • ½ tsp pepper

PREPARATION METHOD:
Cook pasta to al dente (approx. 7 min), shock in cold water, drain and set aside.

In a medium sauce pot, combine butter and flour. Cook on medium, stirring until smooth and slightly toasted. Slowly add milk while stirring and continue to simmer until sauce is bubbly. Stir in cheese until melted and smooth.

While still hot, stir in chipotles, TofuBaked, chilies, fire roasted tomatoes and drained pasta. Season with salt and pepper serve.

 

TofuScram tofu recipes

Tofu Scram

INGREDIENTS:

  • 2 cloves garlic, minced
  • 1/2 an onion, chopped
  • 2 tablespoons coconut oil
  • 1 14-16 oz. Package Nasoya Firm Tofu, cubed
  • 1 tomatoes, chopped
  • 1/2 pound fresh spinach
  • 2 veggie sausages, chopped
  • 1 cup rice
  • 1 ear of corn, with the kernels cut off
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1 avocado for garnish

PREPARATION METHOD:
In a large pan, heat the oil over medium heat. Add the onion and sauté for 5 minutes. Add the garlic and sauté for another minute. Then add the rest of the ingredients (excluding the avocado) and cook for another five to ten minutes. Serve with a garnish of avocado and get ready for a flavor sensation!
